Preparation Time 10-15 minutes
Cooking Time 17-19 minutes
Total Time 27-34 minutes
Level of Difficulty Easy

Ingredients

  • 2 chicken breasts
  • 1/4 cup real mayonnaise (50g)
  • 1/4 cup grated parmesan cheese (22g)
  • 1 teaspoon italian herbs (or herbes de provence)
  • 1/2 teaspoon garlic powder
  • Salt and black pepper

Step 1: Preheat the Oven

Preheat your oven to 425°F (220°C / Gas Mark 7).

If you have a convection oven, reduce the temperature by about 20° or follow the manufacturer’s instructions.

Ensure that the oven is properly heated before you start baking the chicken.

Step 2: Prepare the Chicken Breasts

Pound the chicken breasts slightly at their thickest part to ensure they bake more evenly.

Be careful not to overdo it; the chicken should still resemble breasts and not become too thin.

Season both sides of the chicken breasts with salt and pepper.

Keep in mind that Parmesan cheese is already salty, so be moderate with the salt.

Step 3: Make the Mayo-Cheese Paste

In a small bowl, combine the mayo, grated Parmesan cheese, Italian seasoning, and garlic powder.

Stir until the mixture is well blended.

This paste will serve as both a flavor enhancer and a moisture barrier for the chicken.

Step 4: Coat the Chicken with the Paste

Spread the mayo-cheese paste evenly over the chicken breasts.

Make sure the paste covers all sides of the chicken, with an extra layer on top to ensure richness and flavor.

This will also help keep the chicken moist as it bakes.

Step 5: Bake the Chicken

Place the coated chicken breasts on a baking sheet and bake them in your preheated oven for about 17-19 minutes.

The exact time will depend on the size of the breasts.

To ensure they are fully cooked, measure the internal temperature of the meat using a meat thermometer by inserting it into the thickest part of the chicken.

The temperature should read 158°F (70°C).

The chicken will continue to cook and reach the safe temperature of 165°F (74°C) during the resting time.

Step 6: Rest and Serve

Once baked, let the chicken rest for 5-10 minutes.

This resting period allows the juices to redistribute throughout the meat, resulting in a juicier and more flavorful dish.

After resting, serve your deliciously baked chicken breasts.

Enjoy!
