Possible Ingredient Alternatives
Unsalted butter can be replaced with coconut oil for a dairy-free option, offering a similar texture and richness. Use a 1:1 ratio, but expect a slight coconut flavor. For a lower-fat alternative, consider using mashed avocado, using 3/4 cup avocado for every 1 cup of butter. This substitution will add nutrients and create a denser texture.
Regular flour can be substituted with almond flour or oat flour for a gluten-free version. Use the same amount, but note that the texture may be slightly different. These alternatives also provide additional nutrients and fiber.
Mini semisweet chocolate chips can be replaced with cacao nibs for a sugar-free option with added antioxidants. Use about 2/3 the amount of cacao nibs, as they have a more intense flavor. For a different flavor profile, consider using chopped nuts or dried fruit for part of the chocolate chips, maintaining the same total volume of add-ins.

Ingredients
- 1/2 cup softened unsalted butter
- 1/3 cup white sugar
- 1/3 cup packed light brown sugar
- 2 teaspoons vanilla essence
- 1/4 teaspoon salt
- 1 cup regular flour
- 3 cups mini semisweet chocolate chips (portion divided)
Step 1: Prepare the Cookie Dough
In a medium-sized bowl, whisk together the butter and both sugars until they are well combined and smooth.
Mix in the vanilla extract and a pinch of salt.
Gradually add the flour, ensuring a uniform consistency.
Finally, fold in 1 cup (170 g) of mini chocolate chips into the dough until they are evenly distributed.
Step 2: Form the Cookie Dough Balls
Roll the dough into balls using about 1 tablespoon of dough for each.
Arrange the dough balls on a baking sheet lined with parchment paper.
Once they are all formed, chill them in the refrigerator for 20-30 minutes until they become firm.
Step 3: Melt the Chocolate
While the cookie dough balls are chilling, melt the remaining 2 cups (340 g) of chocolate chips.
Place the chocolate in a heatproof bowl set over a pot of barely simmering water.
Stir continuously until the chocolate is completely melted and smooth.
Make sure the water does not touch the bottom of the bowl to avoid burning the chocolate.
Step 4: Dip and Coat the Cookie Dough Balls
Using a candy dipping tool or the tines of a fork, carefully dip each chilled cookie dough ball into the melted chocolate.
Tap off any excess chocolate and return the cookie dough truffles to the parchment-lined baking sheet.
Step 5: Set the Chocolate and Serve
Once all the cookie dough balls are coated with chocolate, place them back in the refrigerator until the chocolate is set, about 10 minutes.
Once set, your cookie dough truffles are ready to be enjoyed.
Store them in the refrigerator if not serving immediately to keep them fresh and firm.
