Ingredient Substitutions
Grated cheese can be replaced with dairy-free alternatives like shredded vegan cheese for those avoiding dairy. These plant-based options melt similarly and provide a comparable texture. Use the same amount as the original recipe. Almond flour can be substituted with sunflower seed flour for those with nut allergies. Use a 1:1 ratio, but be aware that sunflower seed flour may turn slightly green when baked due to a reaction with baking powder. Cream cheese can be swapped with coconut cream for a dairy-free version. Chill a can of full-fat coconut milk overnight, then scoop out the solid cream on top. Use slightly less than 1/4 cup, as coconut cream is softer than cream cheese. These substitutions maintain the low-carb nature of the recipe while accommodating various dietary needs.

Estimated nutrition for the whole recipe (without optional ingredients):

- Protein: 90-100 g
- Fat: 100-110 g
- Carbohydrates: 30-40 g
Ingredients
- 2 cups grated cheese (choose mozzarella or cheddar)
- 1/4 cup softened cream cheese
- 1 1/2 cups almond flour
- 3 large eggs, divided
- 1 teaspoon baking powder (optional)
Step 1: Prepare the Baking Tray and Cheese Mixture
Begin by preheating your oven to 180°C (350°F).
Line a large baking tray with parchment paper and set it aside.
In a large, microwave-safe bowl, add your shredded cheese and cream cheese.
Microwave for 30 seconds, or until the cheeses have mostly melted.
Remove from the microwave and whisk the mixture until smooth.
Let the cheese cool for several minutes before proceeding to the next step.
Step 2: Form the Dough
When the cheese mixture has cooled slightly, add in the almond flour and two of the eggs.
Mix everything well until a smooth dough forms.
This should create a consistent and pliable dough suitable for shaping.
Step 3: Shape the Dough and Prepare for Baking
Using your hands, divide and form the dough into 10 equal-sized balls.
Place these dough balls on the lined baking tray, ensuring they are spaced evenly.
Whisk the remaining egg and, using a pastry brush, gently brush the exterior of each dough roll.
This will help achieve a golden crust during baking.
Step 4: Bake the Rolls
Bake the rolls in the preheated oven for 25 minutes or until the exterior is golden and firm to the touch.
Monitor the rolls towards the end of the baking time to ensure they do not over-brown.
Step 5: Serve and Enjoy Warm
Remove the rolls from the oven and allow them to cool slightly before serving.
These rolls are best enjoyed warm, as their soft and cheesy interior contrasts nicely with the golden, crispy exterior.
