Ingredients
- 2 1/2 cups flour (sifted)
- 1 1/2 cups granulated sugar (sifted)
- 1 stick of butter
- 1 cup milk
- 1/2 cup buttermilk
- 1 1/2 tsp vanilla extract
- 1 tsp baking soda
- 1 tsp salt
- 3 eggs
- 1/2 stick butter (for icing)
- 1 1/2 cups powdered sugar
- 1 tsp vanilla extract (for icing)
- 1 tbsp buttermilk (for icing)
- 1/2 stick butter (for pecans)
- 1 1/2 tbsp cinnamon
- 1 cup pecan flakes
Step 1: Prepare the Pecan Cinnamon Topping
Preheat your oven to 350°F (175°C).
In a pan, combine 1/2 stick of butter, 1 1/2 tablespoons of cinnamon, and pecan flakes.
Mix the ingredients well to ensure an even coating.
Spread this mixture on a baking sheet and bake in the oven for 6 to 8 minutes.
Once done, set aside to cool.
Step 2: Blend the Wet Ingredients
In a blender, combine 1 stick of butter, 1 cup of granulated sugar, and 1/2 cup of brown sugar.
Blend until the mixture is smooth.
Add 3 eggs to this mixture and blend again for a consistent texture.
Next, stir in 1 teaspoon of vanilla extract and 1/2 cup of buttermilk.
Step 3: Combine the Dry Ingredients Separately
In a separate bowl, mix together 2 1/2 cups of flour, 1 teaspoon of baking soda, and 1 teaspoon of salt.
This ensures that the dry ingredients are evenly distributed before incorporating them into the wet mixture.
Step 4: Mix Wet and Dry Ingredients
Alternately add the flour mixture and 1 cup of regular milk to the blender containing the wet ingredients.
Blend until well combined and the batter is smooth.
Gently fold in 1 cup of pecan flakes (or 1/2 cup if you prefer fewer pecans).
Step 5: Bake the Cake
Pour the prepared batter into a greased 9” round cake pan, making sure it is evenly distributed.
Place the pan in the preheated oven and bake until a toothpick inserted into the center of the cake comes out clean.
Let the cake cool completely on a wire rack before frosting.
Step 6: Prepare and Apply the Icing
While the cake cools, prepare the icing by mixing 1 1/2 cups of powdered sugar, 1/2 stick of butter, 1 tablespoon of buttermilk, and 1 teaspoon of vanilla extract until smooth.
If necessary, make an additional batch of icing to cover the entire cake.
Once the cake has cooled completely, frost the cake evenly with the prepared icing.
