Japanese curry roux can be replaced with a homemade blend of curry powder, flour, and butter to control sodium and avoid additives. Mix 2 tablespoons each of curry powder and flour with 1 tablespoon of butter, then add to the dish as directed. For a gluten-free option, use cornstarch instead of flour.

- 2 chopped garlic cloves

- 1 diced carrot
- ½ thumb-sized piece of grated ginger
- 1 tablespoon worcestershire sauce
- 2 tablespoons tomato ketchup
- 1 pack japanese curry roux (4 cubes)
- 1 ½ to 2 cups beef stock
- Chopped green onions or scallions for garnish
Step 1: Brown the Ground Beef
Begin by heating oil in a small pot over medium heat.
Add the ground beef and cook until it is no longer pink and the fat has rendered.
If you prefer, remove some of the excess oil to make the dish less greasy.
Step 2: Sauté Aromatics
Push the cooked beef to one side of the pot and add chopped garlic, onion, and grated ginger to the empty space.
Cook these aromatics until the onion turns translucent, releasing their flavors into the pot.

Add diced carrots and potatoes to the pot, stirring all the ingredients together to combine evenly.
Pour in the beef broth, Worcestershire sauce, and ketchup.
