Ingredients

- 1/2 onion, chopped finely
- 1 pound (500g) ground beef
- 2 tablespoons tomato paste
- 2 tablespoons water
- 1 teaspoon each of onion powder, dried oregano, and salt
- 2 teaspoons each of cumin powder and paprika
- 1/4 teaspoon cayenne pepper, or adjust to taste
- 400g corn chips (14 oz), high-quality
- 2 cups shredded cheese (cheddar, monterey jack, gruyere, or other favorites)
- 1 batch warm nachos cheese sauce
- Sliced green onions

- 1 batch pico de gallo
- Sour cream
Step 1: Prepare the Beef Mixture
Heat a little oil in a skillet over high heat.
