Suggestions for Ingredient Substitution
Ground beef can be replaced with ground turkey for a leaner option or plant-based crumbles for a vegetarian alternative. Both maintain a similar texture and can be seasoned identically to ground beef. For plant-based crumbles, reduce cooking time slightly to avoid drying out.
Taco shells can be substituted with lettuce wraps for a low-carb option or corn tortillas for a gluten-free alternative. Lettuce wraps provide a fresh crunch, while corn tortillas offer a more traditional flavor. If using lettuce wraps, choose sturdy varieties like iceberg or romaine.
Avocado can be replaced with guacamole for added flavor complexity or Greek yogurt for a tangy, protein-rich option. Both alternatives provide creaminess to balance the taco’s textures. If using Greek yogurt, consider adding a squeeze of lime juice and a pinch of salt to enhance its flavor profile.

Ingredients
- 1 lb ground beef
- 1 medium onion
- 1 14.5 oz can of diced tomatoes
- Trader joe’s taco seasoning
- Taco shells
- 1/4 head of lettuce
- 1 small red onion – diced
- 1 tomato – diced
- Avocado
- Mexican blend shredded cheese
- Salsa of your choice
Step 1: Cook the Beef Filling
Start by heating oil in a pot over medium heat.
Add one medium diced onion and cook it until it becomes caramelized and brown, about 5-10 minutes.
Next, add 1 pound of ground beef to the pot.
Cook the beef until it is browned and no pink remains.
Step 2: Season and Simmer
Stir in one packet of Trader Joe’s taco seasoning (or half a packet for a milder taste) into the beef mixture.
Mix the ingredients well and let it cook for about 5 minutes.
Add one 14.5 oz can of diced tomatoes to the mixture, then lower the heat and let it simmer for 30-40 minutes until the mixture thickens.
Step 3: Prepare the Toppings
While the taco filling is simmering, prepare the toppings.
Dice fresh tomatoes and a red onion.
For the red onion, slice it in half, peel off a layer, and make small cuts both ways to dice it finely.
Slice an avocado into even slices.
Store the prepared toppings in containers in the fridge to keep them fresh.
Step 4: Cook the Taco Shells
Place the taco shells in a toaster oven.
Keep a close eye on them to prevent burning, cooking them until they are crispy and lightly browned.
Step 5: Assemble the Tacos
Once the taco filling is ready, it’s time to assemble the tacos.
Start by placing the beef filling into the taco shells, followed by a layer of lettuce.
Add avocado slices, diced tomatoes, and a spoonful of salsa.
Finish by topping with shredded cheese.
Step 6: Serve and Enjoy
Serve your delicious homemade Trader Joe’s tacos immediately while they’re warm.
Enjoy this flavorful meal with your choice of sides or beverages!
Bon appétit!
