Ingredient Substitutions

Kamut wheat berries can be replaced with spelt berries or regular wheat berries for a similar nutritional profile and texture. Adjust water content slightly as needed, as different grains absorb moisture differently. For those seeking a gluten-free option, sorghum or millet can be used, but expect a denser texture and different flavor profile.

Honey can be substituted with maple syrup or agave nectar for vegan alternatives. Use the same amount, but note that the flavor will be slightly different. For a lower-glycemic option, try using date syrup or coconut sugar, though you may need to adjust the liquid content of the recipe.

Oil can be replaced with applesauce or mashed banana for a lower-fat version. Use the same amount, but be aware that this substitution may result in a denser texture and slightly sweeter taste. For those preferring different fats, melted coconut oil or avocado oil can be used in equal amounts, providing unique flavor notes to the rolls.

  • 3 and 3/4 cups warm water
  • 2 and 1/4 tablespoons instant yeast
  • 1/2 cup honey
  • 1/2 cup oil
  • 3 and 1/4 teaspoons salt
  • 9 to 10 cups flour (from milled wheat berries)
  • Additional flour for dusting

Step 1: Prepare and Mill the Kamut Wheat Berries

Begin by gathering your ingredients: 6 to 7 cups of Kamut wheat berries, 3 and 3/4 cups of warm water, 2 and 1/4 tablespoons of instant yeast, 1/2 cup of honey, 1/2 cup of oil, 3 and 1/4 teaspoons of salt, and additional flour for dusting.

Mill the Kamut wheat berries to yield about 9 to 10 cups of freshly milled flour.

This will be used to make your dough.

Step 2: Activate the Yeast Mixture

In a large mixing bowl, combine 3 and 3/4 cups of warm water and 2 and 1/4 tablespoons of instant yeast.

Add 2 cups of the freshly milled Kamut flour to this mixture.

Mix well until all ingredients are combined.

Step 4: Knead and Shape the Dough

Knead the dough for about 9 minutes until it is soft, stretchy, and slightly sticky.

Lightly flour a clean surface and transfer the dough onto it.

Shape the dough into rolls by pulling off pieces, tucking them under, and rolling them to create a smooth top.

This will ensure even cooking and a nice, round shape.

Step 5: Let the Rolls Rise

Place the shaped rolls into greased 9×13 inch baking dishes, ensuring they are close together.

Cover the rolls with a clean cloth and let them rise for 15 to 20 minutes in a warm place, such as on top of a preheating oven.

This resting period will allow the rolls to become light and airy.

Step 6: Bake and Serve the Rolls

Preheat your oven to 350°F (175°C).

Once the rolls have risen, bake them in the preheated oven for 25 minutes or until they are lightly golden brown on top.

For added flavor, you can optionally brush the tops of the rolls with melted butter after baking.

Allow the rolls to cool slightly in the pan before serving.
