Ingredients

  • 1 cup plain cottage cheese (low-fat is acceptable)
  • 3/4 cup freshly grated parmesan cheese
  • 1/4 cup any type of flour
  • 1 cup finely ground almond meal or almond flour
  • 1 teaspoon baking powder
  • 1/4 cup water
  • 4 eggs, slightly beaten
  • 1/2 teaspoon salt
  • 1/3 cup mixed fresh herbs (1 tablespoon thyme, 1 tablespoon oregano, 1/4 cup chives)

Step 1: Preheat and Prepare the Muffin Pan

Start by preheating your oven to 400°F (200°C).

Line a muffin pan with medium-sized paper baking cups, preparing eight cups in total.

This ensures your muffins won’t stick to the pan and makes for easier cleanup.

Step 2: Mix the Ingredients
