Cooking Time 20-25 minutes
Total Time 80-110 minutes
Level of Difficulty Medium

Ingredients

  • 4 1/2 tsp active dry yeast
  • 2 large eggs (room temperature for better incorporation)
  • 2 cups small curd cottage cheese (gives superior texture to the rolls)
  • 1/2 tsp baking soda
  • 2 tsp salt
  • 4 1/2 cups all-purpose flour (I always use King Arthur all-purpose flour)
  • 1/4 cup granulated sugar
  • 1/2 cup warm water (115°F)

Step 1: Activate the Yeast

Begin by dissolving 4 1/2 teaspoons of active dry yeast in 1/2 cup of warm water (115°F).

Allow the mixture to rest and activate while you prepare the next steps.

Step 2: Prepare the Cottage Cheese

Heat 2 cups of small curd cottage cheese until it reaches 115°F.

This step is crucial as the warm temperature will help activate other ingredients and ensure proper texture.

Step 3: Mix the Dough

In a stand mixer, combine the dissolved yeast, heated cottage cheese, 2 eggs, 1/4 cup of sugar, 2 teaspoons of salt, 1/2 teaspoon of baking soda, and 2 cups of flour.

Beat the mixture until it is smooth.

Gradually add the remaining 2 1/2 cups of flour until the dough forms a ball that is slightly sticky.

Step 4: Knead and Let Rise

Turn the dough out onto a floured surface and knead it for 6 to 8 minutes, until it is smooth and elastic.

Form the dough into a ball and place it in a greased bowl, turning once to grease the top.

Cover the bowl with a clean cloth and let the dough rise in a warm place for about 1 hour, or until it has doubled in size.

Step 5: Shape the Rolls

After the dough has risen, punch it down to release the air.

Divide the dough into 30 equal balls.

Place the dough balls about 2 inches apart on a greased baking sheet.

Cover the rolls and let them rise for another 30 minutes, or until they have doubled in size again.

Step 6: Preheat the Oven and Bake

Preheat the oven to 375°F (190°C).

Once preheated, place the rolls on the middle rack and bake for 12-15 minutes or until they are golden brown.

Remove the rolls from the oven and allow them to cool on a wire rack before serving.
