Ingredients
- 2 boneless chicken breasts
- 1 tablespoon olive oil
- Pinch garlic powder
- Pinch salt
- 1/2 teaspoon dried basil
- Pinch pepper
- 1/2 teaspoon dried oregano
- 1 small zucchini
- 1 medium tomato, diced
- 1/2 cup shredded mozzarella cheese
Step 1: Prepare and Season the Chicken
Butterfly slice each chicken breast in half to create four thin pieces.
Season both sides of the chicken slices with garlic powder, salt, and pepper for added flavor.
Step 2: Brown the Chicken
Heat some olive oil in a pan over medium-high heat.
Once the oil is hot, add the seasoned chicken slices.
Brown the chicken on each side for about 2-3 minutes, or until a golden crust forms.
Once browned, transfer the chicken slices to a medium baking dish.
Step 3: Sauté the Vegetables
In the same pan, add some more olive oil if needed and sauté the zucchini until it becomes soft.
Then add the diced tomato, basil, and oregano.
Season with salt and pepper, and continue to cook for an additional 2-3 minutes until the vegetables are well mixed and flavorful.
Step 4: Combine Chicken and Vegetables
Pour the sautéed vegetable mixture over the browned chicken slices in the baking dish.
Make sure the chicken is evenly covered with the vegetables for optimal flavor distribution.
Step 5: Bake the Dish
Preheat your oven to 325°F (163°C).
Place the baking dish in the preheated oven and cook for 20 minutes.
This will allow the flavors to meld and ensure the chicken is cooked through.
Step 6: Add Cheese and Final Bake
After 20 minutes, remove the baking dish from the oven.
Top the chicken and vegetable mixture with mozzarella cheese.
