Today, I’m excited to share my favorite recipe for Christmas cookies with cardamom.

Ingredients
- 1/2 cup softened unsalted butter
- 1/2 cup softened vegetable shortening
- 1/2 cup sifted powdered sugar
- 1 tablespoon real vanilla extract
- 1 1/2 teaspoons ground cardamom
- 1/4 teaspoon salt
- 2 1/2 cups plain flour
Step 1: Creaming the Ingredients
Using a stand mixer fitted with the paddle attachment or a handheld electric mixer, cream the butter and shortening together on medium speed for 1-2 minutes until smooth and well combined.
Add the confectioners’ sugar, vanilla, cardamom, and salt.
Continue to beat on medium-low speed just until everything is combined for a homogeneous mixture.
Step 2: Incorporate the Flour and Chill the Dough
Add the flour to the mixture and beat on the lowest speed just until no visible streaks of flour remain.
Scrape down the sides of the bowl as needed to ensure even mixing.
Shape the dough into a ball and flatten it into a disk.
Wrap the disk tightly in plastic wrap and refrigerate for 30-60 minutes, until the dough becomes firm enough to roll out.
Step 3: Prepare for Baking
Preheat your oven to 350°F (175°C).
Line 3 baking sheets with parchment paper or use a silicone mat to prevent the cookies from sticking.
Lightly flour your work surface, then roll out the chilled dough to slightly less than 1/2-inch thickness.
Use your preferred cookie cutters to cut out desired shapes.
For this recipe, 1 and 1/2-inch fluted round cookie cutters were used.
Step 4: Shape and Chill the Cookies
Place the cut-out cookies on the prepared baking sheets, spacing them about 1 inch apart.
Refrigerate the cookies on the baking sheets for 30 minutes before baking.
This helps the cookies retain their shape during baking.
Step 5: Bake the Cookies
Bake each sheet of cookies one at a time in the preheated oven for 8-10 minutes, until the edges are lightly browned and the centers are just set.
Be careful not to overbake as the cookies will continue to firm up as they cool.
Step 6: Cool and Serve
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Once cooled, your cookies are ready to serve and enjoy.
