These cookies are crunchy, sweet, and oh-so-delicious. Plus, they have that extra crunch from the cashews.

Ingredients

  • 100g cashews
  • 1 1/4 cups plain flour (150g)
  • 1/2 cup granulated sugar (100g)
  • 5 cardamom pods
  • 110g unsalted butter, softened
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla extract

Step 1: Prepare the Powdered Sugar

Start by powdering 1/2 cup of granulated sugar along with 5 cardamom pods in a blender or food processor.

This will create a fragrant powdered sugar that sets the base flavor for the cookies.

Step 2: Beat the Butter and Sugar

In a bowl, beat 110g of unsalted butter until it softens.

Add the powdered sugar and continue beating until the mixture is well combined and creamy.

This may take a few minutes to achieve a light and fluffy texture.

Step 3: Add Dry Ingredients

To the butter and sugar mixture, add 1/8 tsp of salt, 1/4 tsp of baking powder, and 1 tsp of vanilla essence.

Gradually add 1 1/4 cups of plain flour.

Mix until the flour is fully incorporated into the mixture.

Step 4: Incorporate Cashews and Form Dough

Coarsely crush 100g of cashews and add them to the flour mixture.

Ensure that the cashews are broken into small pieces but are not completely powdered.

Beat the mixture together just until it is well combined and forms a dough.

Avoid over-mixing.

Step 5: Shape and Garnish the Cookies

Preheat your oven to 160°C (320°F).

Divide the dough into 20-22 small balls and place them on a baking tray, ensuring there is some distance between each ball to allow for spreading.

Gently press each ball with your fingers to flatten it slightly.

Place a whole or halved cashew on top of each flattened ball, gently pressing it in.

Optionally, sprinkle a bit of sugar on each cookie.

Step 6: Bake and Cool

Bake the cookies in the preheated oven at 160°C for 20-25 minutes, or until the edges are lightly golden.

Remove the cookies from the oven and allow them to cool completely on the baking tray.

They will be soft when taken out of the oven but will harden as they cool down.
