Ingredients
Dough:
- 1 egg white (medium size egg)
- 1 tsp lemon juice
- 100 g (1/2 cup + 3 tbsp) icing sugar
- 200 g (2 cups packed) almond flour
- A sachet of vanillin or vanilla bean seeds
- 3 g (2 tsp) ground cinnamon
- 1/2 tsp ground ginger
- A pinch of clove powder
- A pinch of salt
Icing:
- 30 g egg white (small size egg)
- 1 tsp lemon juice
- 150 g (1 cup) icing sugar
Step 1: Prepare the Meringue
In a medium bowl, add 1 egg white (from a medium-sized egg) and 1 teaspoon of lemon juice.
Whip the egg white with the lemon juice until stiff peaks form.
Gradually add 100 grams (1/2 cup + 3 tablespoons) of icing sugar while stirring constantly with an electric mixer until you obtain a smooth and velvety meringue.
Set the meringue aside.
Step 2: Combine Dry Ingredients
In a large bowl, add 200 grams (2 cups packed) of almond flour.
To the almond flour, add a sachet of vanillin (or vanilla bean seeds if preferred), 3 grams (2 teaspoons) of ground cinnamon, 1/2 teaspoon of ground ginger, a pinch of clove powder, and a pinch of salt.
Mix all the dry ingredients together until well combined.
Step 3: Form the Dough
Pour the prepared egg white and sugar mixture into the almond mixture.
Mix the two mixtures together using a spatula initially, then proceed to knead the dough with your hands until it becomes thick, consistent, and slightly sticky.
Cover the dough with plastic wrap and place it in the refrigerator for at least 1 hour.
Step 4: Roll Out and Shape the Dough
After 1 hour, prepare your work surface by dusting it with icing sugar.
Dust a rolling pin with icing sugar as well.
Roll out the dough to a thickness of about 0.2 inches (half a centimeter).
Use a cookie cutter dipped in icing sugar to cut out star shapes from the dough.

To prepare the icing, mix 30 grams (half an egg white or a small-sized egg) with 1 teaspoon of lemon juice and 150 grams (1 cup) of icing sugar until the mixture is dense.
If the icing is too liquid, add more sugar until it reaches the desired consistency.
Frost the cookies by adding a teaspoon of icing at the center of each star and using a toothpick to stretch the icing to the tips.
Place the frosted cookies on a baking tray lined with baking paper or on a rack to dry.
Step 7: Dry and Store the Cookies
Allow the icing to solidify for at least a couple of hours.
It is preferable to leave the cookies out in the air for at least 1 day before storing them in a box.
Store the cookies in a biscuit tin, where they can be kept for up to 1 month.
