Ingredients
For the cookies:
- 2 tsp baking soda
- 1 large egg (at room temperature)
- 1/4 cup premium bourbon (use a good quality bourbon for best flavor)
- 1/2 cup melted salted butter (I use Challenge butter)
- 1/4 tsp salt
- 2 cups chopped milk chocolate (choose a brand you love to eat on its own)
- 2 cups all-purpose flour
- 1 cup dark brown sugar (packed well)
- 1 1/2 tsp vanilla extract
For preparation:
- shortening
For topping:
- salt (flaky sea salt is nice for presentation)
Step 1: Prepare the Dry Ingredients
In a large mixing bowl, combine the sifted flour, baking soda, and salt.
Whisk these ingredients together well to ensure they are evenly distributed.
Step 2: Prepare the Wet Ingredients
In another mixing bowl, mix the brown sugar, melted butter, egg, bourbon, and vanilla.
Stir vigorously until the mixture is smooth and well combined.
Step 3: Combine Dry and Wet Ingredients
Slowly add the dry ingredients to the bowl of wet ingredients.
Stir the mixture until everything is well incorporated.
Fold in the chopped chocolate chunks to evenly distribute them throughout the dough.
Step 4: Chill the Dough
Cover the bowl with plastic wrap and refrigerate the dough for one hour.
This step is crucial for developing the flavors and ensuring the cookies have a nice texture when baked.
Step 5: Prepare for Baking
Preheat your oven to 350°F (175°C).
Lightly grease two baking sheets with Crisco or use parchment paper if preferred.
Roll the chilled dough into golf ball-sized rounds and place them evenly spaced on the baking sheets, pressing down the tops slightly to flatten.
Step 6: Bake and Serve
Sprinkle a bit of salt on top of each dough round.
Bake the cookies for 8-10 minutes, until they are set at the edges but still slightly undone in the center.
Once baked, allow the cookies to cool slightly on the baking sheets before transferring them to a cooling rack.
Serve warm and enjoy your delicious bourbon chocolate chunk cookies!
