Today, I’m sharing a special recipe for Christmas cookies with a delicious walnut filling.

Ingredients
- 1/2 cup softened butter
- 1 cup brown sugar
- 1 egg
- 1 teaspoon vanilla essence
- 2 cups plain flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup chopped walnuts
- 1/2 cup brown sugar
- 1/4 cup sour cream
Step 1: Preheat and Prepare Wet Ingredients
Begin by preheating your oven to 350°F (175°C).
In a large bowl, cream together the butter and sugar until smooth and well combined.
Once the mixture is creamy, mix in the egg and vanilla extract until fully incorporated.
Step 2: Combine Dry Ingredients
In a separate bowl, sift the flour, baking soda, and salt together.
Gradually add the sifted dry ingredients to the butter, sugar, egg, and vanilla mixture.
Stir until the dough comes together and is well mixed.
Step 3: Prepare the Walnut Filling
In another bowl, combine the chopped walnuts, ½ cup of brown sugar, and the sour cream.
Mix until the ingredients are well combined and form a cohesive filling.
Step 4: Form and Fill the Cookies
Using a 1½ inch cookie scoop, place scoops of dough onto a baking sheet lined with a Silpat or parchment paper.
Use your thumb to make an indentation in the center of each cookie.
Fill each indentation with a generous teaspoon of the walnut filling.
Step 5: Bake and Cool the Cookies
Bake the cookies in the preheated oven for 11-12 minutes, or until they just start to turn brown around the edges.
Remove the cookies from the oven and let them cool on the baking sheet for about 5 minutes.
Then, transfer the cookies to a wire rack to finish cooling completely.
Step 6: Enjoy Your Cookies
Once the cookies have cooled, they are ready to be enjoyed.
