Ingredient Substitutions
For a healthier alternative to candy melts, consider using melted coconut oil mixed with powdered sugar and vanilla extract. This substitution provides a similar coating effect while offering beneficial fatty acids. Adjust sweetness to taste. Candy canes can be replaced with natural peppermint extract and a small amount of beet powder for color, creating a less processed version with similar flavor impact. Use about 1 teaspoon of extract and add beet powder gradually for desired color. For those avoiding chocolate, carob chips make an excellent substitute in this recipe. They offer a similar texture and sweetness profile while being naturally caffeine-free. Use the same quantity as called for with chocolate chips. These substitutions maintain the festive flavor of the original recipe while accommodating various dietary preferences.

Ingredients
- 1/2 cup unpopped popcorn kernels (yields 10 cups popped)
- 12 oz vanilla-flavored candy melts (or use vanilla almond bark)
- 5 peppermint candy canes, finely crushed (should be a mix of powder and small bits, about 1/2 cup)
- A few tablespoons of decorate sprinkles (optional)
- 1/2 cup high-quality chocolate chips (choose milk, semi-sweet, or dark as you like)
- 1/4 teaspoon peppermint flavoring
Step 1: Prepare the Popcorn
Start by popping the popcorn kernels in a popcorn popper according to the manufacturer’s directions.
Once popped, transfer the popcorn into a very large bowl, and remove any un-popped kernels to ensure a smooth, crispy treat.
Step 2: Coat with Candy Melts
Melt the candy melts following the instructions on the package.
Pour the melted candy over the popcorn and toss until the popcorn is evenly coated.
Set aside 1 tablespoon of crushed candy canes and immediately add the remaining crushed candy canes to the popcorn, tossing again to ensure even distribution.
Step 3: Add Sprinkles and Spread
If desired, sprinkle Christmas or red sprinkles over the coated popcorn for extra festive flair.
Spread the popcorn mixture onto a large piece of parchment or wax paper, forming a single layer.
You can add more sprinkles at this stage if you wish.
Step 4: Drizzle with Chocolate
In a microwave-safe bowl, melt chocolate chips on 50% power, microwaving in 30-second intervals.
Stir after each interval until the chocolate is completely melted and smooth.
Stir in the peppermint extract to infuse the chocolate with a minty flavor.
Transfer the melted chocolate to a piping bag, and cut the tip from a corner to create a small opening.
Drizzle the peppermint chocolate evenly over the popcorn.
Step 5: Add Final Candy Cane Touches and Set
Sprinkle the reserved 1 tablespoon of crushed candy canes over the drizzled chocolate for an added crunch and visual appeal.
Allow the chocolate to set at room temperature.
Once set, break the popcorn into pieces and store in an airtight container to maintain freshness.
