Ingredients
- 3 eggs
- 250 g cottage cheese
- 1 apple
- 1/2 teaspoon cinnamon
- 4 tablespoons wheat flour
- 2 tablespoons powdered sugar
Step 1: Prepare the Base Mixture
Start by separating the yolks from the egg whites and placing the yolks in a bowl.
To the yolks, add 250 grams of cottage cheese and combine the ingredients until they are well mixed.
Step 2: Incorporate the Apple
Peel the apple and grate it.
Sprinkle 1/2 teaspoon of cinnamon over the grated apple and mix thoroughly.
Add this grated apple mixture to the bowl with the cottage cheese and yolk mixture, ensuring everything is combined evenly.
Step 3: Mix in the Flour
Add 4 tablespoons of wheat flour to the combined mixture and stir thoroughly until everything is well incorporated.
This will help bind the ingredients and create a thicker batter.
Step 4: Prepare the Egg Whites
In a separate bowl, beat the egg whites until stiff peaks form.
Gradually add 2 tablespoons of powdered sugar while continuing to beat the egg whites.
This will add sweetness and help create a fluffy texture.
Step 5: Combine the Mixtures
Gently fold the whipped egg whites into the cottage cheese mixture until everything is combined.
Take care not to deflate the egg whites to keep the mixture light and airy.
Step 6: Cook the Pancakes
Heat a non-stick (preferably Teflon) pan over medium heat.
Once hot, place portions of the pancake batter onto the pan.
Fry the pancakes for about 4 minutes, turning them halfway through cooking to ensure even browning on both sides.
