Ingredients
- 1/4 cup cotija cheese (freshly grated for better texture)
- 1/2 tsp garlic powder
- 1 cup roasted corn kernels (thawed if frozen)
- 1 tbsp fresh lime juice
- 1/4 cup plain Greek yogurt (I prefer Fage 0%)
- 1 cup cottage cheese (full-fat for best creaminess)
- 1 tsp chili powder
- 1 tbsp butter
- salt to taste
- 1 tbsp fresh chopped parsley
- black pepper to taste
Step 1: Sauté the Corn
In a medium skillet, melt the butter over medium heat.
Once melted, add the corn kernels to the skillet.
Cook the corn for about 10 minutes, stirring occasionally, until the kernels become slightly charred and golden.
Step 2: Cool the Corn
Remove the skillet from heat and let the charred corn cool for a few minutes.
This will help prevent the cottage cheese and yogurt from heating up when mixed.
