Ingredients
For the crepes:
- 10 crepes
For the cottage cheese filling:
- 1 medium egg
- 3 tsp rum raisins (plumped in rum for 30 minutes if dried)
- 100g sour cream
- 1 cup cottage cheese
- 1/2 tsp lemon zest (finely grated for best flavor)
For the topping:
- 2 tsp sugar (granulated)
- 150g sour cream (preferably full-fat for a richer topping)
- 2 medium eggs
For serving:
- 3/4 cup jam (homemade or a good quality commercial jam like Bonne Maman)
- fruits for garnish (sliced fresh berries or stone fruits work well)
Step 1: Prepare the Cottage Cheese Mixture
Begin by crumbling fresh cottage cheese into small pieces in a bowl.
Add 100g of sour cream to the crumbled cottage cheese and mix well.
If the mixture feels too dry, add an additional spoonful of sour cream to achieve the desired consistency.
Step 2: Add Flavor and Ingredients
Grate in half a teaspoon of lemon zest and mix to incorporate the bright flavor.
Next, add three teaspoons of rum raisins (or substitute with cranberries or other dried fruits) and one medium-sized egg.
Mix everything together until it is smooth and well-combined.
Step 3: Preheat the Oven and Prepare Crêpes
Preheat the oven to 180°C (356°F).
While the oven is heating, take each crêpe and spread 1 to 2 tablespoons of the cottage cheese mixture onto it.
Fold in the sides of the crêpe and roll it up tightly to ensure that nothing escapes from the filling.
Step 4: Arrange Crêpes in Baking Dish
Place the filled crêpes seam side down into a baking dish lined with parchment paper, packing them tightly together.
This will help them hold their shape while baking and enhance the overall texture.
Step 5: Prepare the Egg and Sour Cream Mixture
In a pitcher, combine two medium-sized eggs and 150g of sour cream.
Mix until smooth.
Add 2 teaspoons of sugar to the egg and sour cream mixture and mix well to ensure the sugar is fully dissolved.
Step 6: Bake the Crêpes
Pour the egg and sour cream mixture over the rolled crêpes in the baking dish and spread it around evenly with a spoon.
Bake the crêpes in the preheated oven for 15 minutes, until they are set and slightly golden.
Step 7: Serve and Enjoy
Once baked, remove the crêpes from the oven and serve them hot or allow them to cool slightly.
