Ingredients
For the paneer:
- 600 grams paneer
For the marinade:
- salt to taste
- 4 tbsp worcestershire sauce
- 2 tbsp fresh parsley
- crushed black pepper to taste
- 1 tsp red pepper flakes
- 3 tsp minced garlic
- 4 tbsp extra virgin olive oil
For the sauce:
- 2 tbsp all-purpose flour
- 2 tbsp melted butter
- 2 tbsp butter
For the herbed rice:
- 2 tbsp extra virgin olive oil
- 1 tsp dried red pepper flakes
- 2 tbsp minced garlic
- 2 cups cooked basmati rice
For the vegetables:
- 2 small carrots
- 2 small green zucchinis
- 2 tsp minced garlic
- 2 small yellow zucchinis
- a pinch red pepper flakes
- 16 button mushrooms
- salt to taste
- crushed black pepper to taste
- 15 blanched broccoli florets
- 2 tsp extra virgin olive oil
- 8 blanched cabbage leaves
For serving:
- french fries
Step 1: Prepare the Marinade for Paneer
In a bowl, combine finely chopped garlic, red chilli flakes, salt, and crushed black peppercorns.
Add chopped parsley, Worcestershire sauce, and 1 tablespoon of oil to the mixture and mix well.
Then, add the paneer pieces to the marinade and mix to coat them evenly.
Set aside for 10 minutes to allow the flavors to infuse.
Step 2: Sear the Marinated Paneer
Heat the remaining oil in a non-stick shallow pan over medium heat.
Once the oil is hot, place the marinated paneer pieces in the pan and sear them on both sides for 1-2 minutes until they are golden brown.
Remove the paneer from the pan and set aside.
Step 3: Prepare the Sauce
In the same pan, add butter and let it melt.
Once melted, add refined flour and mix well using a whisk.
Gradually add 1 cup of water while whisking continuously to avoid lumps.
Add salt and mix.
Cook the mixture until it thickens, then strain it to ensure a smooth consistency.
Set aside the sauce.
Step 4: Sauté the Vegetables
Heat oil in another non-stick pan over medium-high heat.
Add green zucchini, yellow zucchini, mushrooms, garlic, and dried red chilli flakes to the pan.
Season with salt and crushed black peppercorns, then sauté on high heat for 2-3 minutes.
Add the blanched carrots and broccoli, and toss everything together to ensure the vegetables are evenly cooked.
Step 5: Combine and Serve
Add the seared paneer pieces back to the pan with the sautéed vegetables.
Pour the prepared sauce over the mixture and gently toss to incorporate everything.
Cook for another 1-2 minutes until everything is heated through.
Serve hot, and enjoy your delicious paneer with sautéed vegetables!
