Ingredients

  • 600 grams paneer, cut into 3-inch pieces
  • 3 teaspoons minced garlic
  • 1 teaspoon red pepper flakes
  • Salt to taste
  • Crushed black pepper to taste
  • 2 tablespoons freshly chopped parsley
  • 4 tablespoons worcestershire sauce
  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 tablespoons melted butter
  • 8-10 blanched cabbage leaves
  • French fries to serve

Sautéed Vegetables

  • 2 teaspoons extra virgin olive oil (for sautéing vegetables)
  • 2 small green zucchinis, cut into diamond shapes
  • 2 small yellow zucchinis, cut into diamond shapes
  • 16-18 button mushrooms, quartered
  • 2 teaspoons minced garlic (for sautéing vegetables)
  • A pinch of red pepper flakes (for sautéing vegetables)
  • Salt to taste (for sautéing vegetables)
  • Crushed black pepper to taste (for sautéing vegetables)
  • 2 small carrots, cut into diamond shapes and blanched
  • 15-20 blanched broccoli florets

Herbed Rice

  • 2 cups cooked basmati rice
  • 2 tablespoons extra virgin olive oil (for herbed rice)
  • 2 tablespoons minced garlic (for herbed rice)
  • 1 teaspoon dried red pepper flakes (for herbed rice)
 

Step 1: Prepare the Marinade for Paneer

In a bowl, combine finely chopped garlic, red chilli flakes, salt, and crushed black peppercorns.

Add chopped parsley, Worcestershire sauce, and 1 tablespoon of oil to the mixture and mix well.

Then, add the paneer pieces to the marinade and mix to coat them evenly.

Set aside for 10 minutes to allow the flavors to infuse.

 

Step 2: Sear the Marinated Paneer

Heat the remaining oil in a non-stick shallow pan over medium heat.

Once the oil is hot, place the marinated paneer pieces in the pan and sear them on both sides for 1-2 minutes until they are golden brown.

Remove the paneer from the pan and set aside.

 

Step 3: Prepare the Sauce

In the same pan, add butter and let it melt.

Once melted, add refined flour and mix well using a whisk.

Gradually add 1 cup of water while whisking continuously to avoid lumps.

Add salt and mix.

Cook the mixture until it thickens, then strain it to ensure a smooth consistency.

Set aside the sauce.

 

Step 4: Sauté the Vegetables

Heat oil in another non-stick pan over medium-high heat.

Add green zucchini, yellow zucchini, mushrooms, garlic, and dried red chilli flakes to the pan.

Season with salt and crushed black peppercorns, then sauté on high heat for 2-3 minutes.

Add the blanched carrots and broccoli, and toss everything together to ensure the vegetables are evenly cooked.

 

Step 5: Combine and Serve

Add the seared paneer pieces back to the pan with the sautéed vegetables.

Pour the prepared sauce over the mixture and gently toss to incorporate everything.

Cook for another 1-2 minutes until everything is heated through.

Serve hot, and enjoy your delicious paneer with sautéed vegetables!
