Ingredients
- Half a bunch of kale, stems discarded, leaves thinly sliced
- 1 large garlic clove, thinly sliced
- 1 tablespoon extra virgin olive oil
- 1 cup low-fat cottage cheese
- 1 tablespoon lemon juice
- A pinch of red pepper flakes
Step 1: Prepare the Kale
Remove the thick stems from the kale and thinly slice the leaves.
To make slicing easier, stack the leaves, roll them up lengthwise, and then slice into thin ribbons.
Step 2: Sauté the Kale and Garlic
In a medium pan, sauté thinly sliced garlic and the prepared kale over medium heat for 3 to 4 minutes, until the kale is wilted and the garlic is fragrant.
Remove from heat and allow the mixture to cool completely.
Step 3: Blend the Kale Mixture
Once the kale and garlic mixture has cooled, transfer it to a blender.
Process until the mixture is finely chopped and well-combined.
Step 4: Add Cottage Cheese and Seasonings
Add the cottage cheese to the blender with the kale mixture and blend until smooth.
Next, add the lemon juice and a pinch of red chili flakes.
Pulse a couple of times until just combined, ensuring the chili flakes are evenly distributed.
Step 5: Serve and Enjoy
Transfer the dip to a serving bowl and pair it with raw vegetables or your favorite crackers.
