Ingredient Substitutions
Minced beef can be replaced with ground turkey or chicken for a leaner option, or plant-based meat alternatives for a vegetarian version. Adjust cooking time slightly as poultry may cook faster than beef. For the diced tomatoes, fresh tomatoes can be used if canned are unavailable. Chop about 3-4 medium tomatoes and add a quarter cup of water to compensate for the missing canned juice. Banana peppers can be substituted with bell peppers for a milder flavor or jalapeños for added heat. If using fresh peppers, add a splash of vinegar to replicate the tangy flavor from the pepper jar juice. These substitutions maintain the soup’s overall flavor profile while offering flexibility for different dietary preferences and ingredient availability.

Ingredients
- 1.5 pounds minced beef
- 1 tablespoon olive oil
- 2 cloves garlic (chopped finely)
- 1 small yellow onion (chopped)
- 1 can diced tomatoes, 28 ounces (including juice)
- 3/4 cup banana peppers, chopped
- 1/3 cup juice from banana pepper jar
- 1 can tomato paste, 6 ounces
- 4 to 5 cups beef stock
- 2 teaspoons italian herbs
- 1 teaspoon onion powder
- Salt and pepper as desired
- 1 bag green beans, 12 ounces (frozen, fresh, or canned)
Step 1: Prepare Ingredients in a Dutch Oven or Large Pot
Begin by heating olive oil in a 5- or 6-quart Dutch oven or large pot over medium-high heat.
Add chopped onion and minced garlic, and cook until they become translucent, about 2 minutes.
Add the beef and cook, stirring occasionally, until it is browned, about 4 to 5 minutes.
Incorporate a bag of green beans into the beef mixture and mix together with a spoon.
Step 2: Add Liquid and Seasonings
Add broth, canned tomatoes (including their liquid), tomato paste, banana peppers along with their juice, onion salt, Italian seasoning, salt, and pepper to the pot.
Stir the mixture thoroughly to ensure all ingredients are combined well.
Step 3: Simmer the Soup
Bring the mixture to a boil, then reduce the heat to a gentle simmer.
Allow the soup to cook until the green beans are very tender, about 30 minutes, stirring occasionally to prevent sticking.
Step 4: Prepare Ingredients for Slow Cooker Option
For a slow cooker version, heat olive oil in a large skillet over medium-high.
Add a tablespoon of olive oil, ground beef, garlic, and onion.
Cook until the beef is browned and onions are translucent, about 2 minutes.
Transfer this mixture to a slow cooker.
Step 5: Slow Cook for Tenderness
To the slow cooker, add broth, canned tomatoes (with liquid), tomato paste, banana peppers and juice, onion salt, Italian seasoning, salt, and pepper.
Stir well to ensure everything is mixed evenly.
Cover the slow cooker and let the soup cook on LOW for 6 to 8 hours.
Step 6: Instant Pot Option
Switch on the Instant Pot and set it to sauté mode, allowing it to heat up.
Add 1 tablespoon of ghee, then add minced garlic, onions, and hamburger meat, cooking for about 3 to 4 minutes.
Turn the Instant Pot setting to high pressure, then add the remaining soup ingredients.
Step 7: Cooking with Pressure
Secure the lid on the Instant Pot and make sure the top vent is sealed.
Cook the soup on high pressure for 10 minutes.
Once the cooking time elapses, perform a quick release to remove the pressure.
Stir the soup well with a wooden spoon.
Step 8: Serve and Enjoy
Regardless of the cooking method chosen, once the soup is done, divide it among bowls and serve while hot.
Enjoy this hearty and flavorful dish!
