Pork shoulder can be replaced with chicken thighs or beef chuck roast for different flavor profiles while maintaining a tender, shreddable texture. Adjust cooking times accordingly, as chicken will cook faster than pork or beef. Bacon fat can be substituted with avocado oil or coconut oil to maintain a high smoke point and keto-friendly fat content. Use the same amount as called for in the recipe. For a lower-calorie option, consider using bone broth instead of chicken stock. This substitution adds more nutrients and collagen while keeping the dish keto-friendly. Use the same quantity as the original recipe specifies for chicken stock.

Ingredients

  • 3 to 4 pounds pork shoulder
  • Salt and pepper to taste
  • 2 tablespoons bacon fat (or your choice of oil or butter)
  • 1 tablespoon chili powder
  • 1 teaspoon cumin powder
  • 1 teaspoon garlic powder
  • 3/4 cup chicken stock
  • 1 batch easy sugar-free bbq sauce

Step 1: Prepare the Pork Roast

Begin by patting the pork roast dry with a clean rag or paper towel to remove any excess moisture.

Chop the roast into large chunks to facilitate faster and more even cooking.

Generously sprinkle the pork pieces with salt and pepper for seasoning.

Set aside.

Step 2: Brown the Pork in the Instant Pot

Turn the Instant Pot to the sauté function and add bacon grease.

Allow the grease to melt and heat up until it’s hot.

Add half of the pork chunks to the pot, ensuring they have enough room to brown properly.

Sauté the chunks, browning on all sides, which should take a few minutes.

Once browned, remove these pieces from the pot and set them aside.

Add the remaining pork chunks to the pot, repeating the browning process.

Once done, return all the browned pork chunks back into the pot.

Step 3: Season and Cook the Pork

Sprinkle the browned pork with chili powder, cumin, and garlic to add robust flavor.

Pour chicken broth over the seasoned pork to help cook and tenderize the meat.

Secure the Instant Pot lid, ensuring the vent is set to seal.

Program the Instant Pot to manual high pressure for 45 minutes.

Once the cooking cycle completes, allow the pressure to naturally release for an additional 15 to 20 minutes to ensure the pork remains tender.

Step 4: Shred and Season the Pork

Carefully open the Instant Pot once the pressure has fully released.

Transfer the cooked pork chunks to a large bowl.

Using two forks, shred the tender pork into fine pieces.

Add BBQ sauce to the shredded pork and toss until the meat is well coated.

Taste and adjust the seasoning by adding more salt and pepper if needed.

Step 5: Serve and Enjoy

Your delicious, tender BBQ pork is now ready to serve.
