- 1/2 pound minced chicken breast

- 1 pint cherry or grape tomatoes
- 1 cup cooked white beans
- 1 tablespoon lemon juice
- 1/2 cup dry white wine or vegetable stock
- 2 tablespoons fresh basil, chopped
Step 1: Prepare the Zucchini Noodles and Aromatics
Begin by using a spiralizer to spiralize 3 zucchini, then pat the zoodles dry with a clean kitchen towel to remove excess moisture.
Set them aside.
If preferred, you can skip spiralizing and use pre-spiralized zucchini noodles.
Mince 4 cloves of garlic and chop 2 tablespoons of fresh basil, and set them aside as well.
Step 2: Cook the Garlic and Chicken
Heat 1 tablespoon of oil in a frying pan over medium heat.
Once hot, add the minced garlic and cook until it begins to soften and release its aroma.
Next, add pieces or slices of chicken to the pan and cook for about 5 minutes, stirring occasionally until the chicken is browned and partially cooked.
Step 3: Add Tomatoes and Simmer
Mix in 1 pint of cherry or grape tomatoes, 1 tablespoon of fresh lemon juice, and 1/2 cup of dry white wine or vegetable broth into the pan with the chicken and garlic.
